Living In usa makes so many things possible with food atleast. Here you get the freshest and variety of vegetables and fruits which are very very important for young kids.
I will suggest you some of the recipes and fruits that will look appeitizing for your daughter at the same time healthy and delicous.
Iron is very important:
Iron is available widely in green leafy vegetables like spinach,arugula,beet greens,kale lettuce ,cabbage etc.
Here r some of the things you could do:
take 2-3 mixed greens
say spinach,beet greens and cabbage shredded.
blanch /steam them just so that they r tender.
Mix finely chopped onions,mashed potatoes,lemon juice,salt and very little pepper powder (if you want).add the greens and roll over bread crumbs and make small cutlets. shallow fry them just to give them a good color on both sides (as all the vegetables r already cooked) in butter.
give it to your child and she will definately enjoy it and have all the healthy stuff too.
remember not to over boil the greens. steaming is best as it retains most of the moisture.
If you daughter enjoys eating raw vegetables,don't stop her. Try to wash them into small peices and allow her to munch on it as a early day snack/lunch.
Vitamins:
Beets and carrots have high amount of vitamin A and carrots have so many good properties,beets purify the blood and increase iron and heamoglobin.
usually kids like carrots ,but not beets.
My best suggestion is
Boil the carrots and beets together with very little water.add salt and pepperpowder and mix them with cooked tuvar dal/moong dal.
mix this with ghee rice and give.
another way is to cut carrots and beets into fine peices and fry them in a 2tsp of oil and add salt and chilli powder for taste. sprinkle some corriander leaves and give it just as a snack.
We all the proverb,AN APPLE A DAY KEEPS THE DOCTOR AWAY.
try to experiment by giving all the types of apple raw to you kid. see what taste she prefers the best. If she likes tarty apple ,the best way to consume it is raw.
if she likes sweet apple,then make a apple sauce and give it with chappathi/roti.
to make apple sauce.
cut red apples (discard the skin if you want) into small peices. In a stock pot add 2cups of water and apples and 2cups of sugar. allow the apple to glaze and completely get cooked. mash all the apples if you don't prefer lumps,other wise finally garnish it with little nutmeg and cardamon powder.
I am sure your kid will definately love this dish.
In south indian recipe,Ghee rice with dal is considered very healthy. I will recommend the addition of little boiled vegetables also with it.
As far as possible see that the fruits are consumed raw.Atleast one fruit per day.
Make banana,apple,strawbbery shakes. or just mash them and beat them with milk and sugar and give.
orange juice can be consumed.
milk is extremely essential too.
